2005 Henry of Pelham Estate Winery Baco Noir Reserve, V.Q.A., Ontario, Canada: VC: It is still rare in Ontario for a winery to be closely identified with one grape variety; Henry of Pelham and Baco Noir is one such hugely successful association. Years ago, the Speck brothers and winemaker Ron Giesbrecht recognized the potential of this hybrid grape and made it their signature wine. Bursting with wild black fruit, ripe plum, gamey and spicy aromas and flavors that are well complemented by fresh acidity and moderate tannins. It's rare to find a Bordeaux that's not a blend, but this 100% merlot hits all the points through the palate very effectively. The well-defined flavors are concentrated and restrained, and they're well balanced by a seam of acidity that adds a refreshing dimension to the texture. The tannins are supple and manageable.
