Skate With Honey Black Bean Sauce
Serves 4
Level of Difficulty: Easy
4 filets 6 oz each of skate
1 tablespoon of salt
1 teaspoon of white pepper
1 jar 6 oz of black bean sauce
1 tablespoon of sesame oil
2 tablespoons of clover leaf honey
1 bunch of green onions, cleaned and chopped, the white and half the green part
1 tablespoon of extra virgin olive oil
Instructions:
preheat oven to 350 F.
Season the fish fillets with salt and pepper. Combine the black bean sauce with the honey, and sesame oil. Stir to combine. Coat a baking pan with non stick spray. Dip the fillets in the black bean, honey, sesame oil sauce. Place on pan and bake for 7 to 10 minutes until done. Turn the broiler on and caramelize the tops, watching carefully not to burn the sea bass. Remove from oven. Keep warm.
Heat the olive oil in a pan and add the onions. Remove once they are tender. Plate the fish: top each sea bass with some of the cooked onions. Serve with steamed vegetables of choice.
